THE best screencasting app out there + SO much more!
I'd use EE for pretty much any demonstration capacity. Whether it be something simple for teachers like looking up a book in our library, or more complex like students creating a real life math problem. The possibilities are endless and thankfully Reshan Richards (creator) continues to build upon and update his app based off user needs.

Explain Everything: The best screencasting app!
I have tried all (I think) of the screencasting apps, and Explain Everything is the best by far. It has the most tools and the most/best options for saving and sharing the videos created. This app is an app for creating - both by the teacher and/or student.

Great for flipped class and homework support
Attaching Word documents as pictures by taking a screenshot was a bit of an extra step sometimes but worked out well to make sure focus was on specific parts of the document. It is almost impossible smoothly to use without a solid stylus also. Overall, the kids liked it and it gives you multiple ways to sync a presentation with sound, video, pictures, and edit out the mistakes. Try a lesson just for fun (with all that spare time you have) before doing your actual assignment/lesson because the first one will most likely be rough.

Great tool to help students & teachers pull together engaging presentations!
I feel Explain Everything is a one-stop shop for creating and organizing presentations which can then be incorporated into learning in a variety of methods. It works well with existing devices and digital tools. Students are excited to have one tool to upload and organize presentations. This tool is excellent for use in a blended learning classroom or with a learning management system. You will need to directly instruct students in the use of Explain Everything.

This app allows you to create educational, white-board style videos and has more advanced features than Educreations or Show Me.
This product has some great features. I scanned math pages into pdfs and loaded them directly into the app. There is an assortment of writing and pointing tools which were useful. A feature that was particularly helpful is that you can redo a portion of the video if you make a mistake. Educreations is simpler to use, but if you make a mistake, you have to start all over again.

This is an excellent way to demonstrate concepts for students.
This is an excellent teaching tool because it was so fast and user friendly. I uploaded a pdf of the document I intended to annotate and recorded the presentation in less than ten minutes. For my purposes, I'd like to have the ability to write smaller text more quickly right on the document and this does not really allow for that; however, the highlighting and underlining tools are very easy to use.

Great App for teachers looking to Flip their classrooms
Explain Everything is a quick way to create video tutorials for your students. Teachers can upload images or documents and record their verbal explanations as they add notes. The tool itself takes a little getting used to. I find my handwriting looks much worse on the screen than in reality, even using a stylus. There is also a little lag time between when you write and when it pops up on the screen. This makes videos move much more slowly than if you were explaining a particular concept in person.

Explain Everything helps in Flipping the Classroom
Students are able to see a presentation in real time when using Explain Everything in the classroom in combination with an Apple TV or other device to allow the screen of the iPad to be mirrored. Explain Everything's ability to export in various formats also allows for presentations to easily be uploaded to various sites for viewing by students when away from the classroom. This makes flipping your classroom so much easier!
For schools looking for a virtual whiteboard solution without huge funds, this app is fantastic and the investment is much lower than a virtual whiteboard system. The cost being only $2.99 currently in the app store, and less if purchased in a Volume Purchasing Program, makes it very affordable for any teacher to use with their iPad.

Multimedia presentations made easy
Explain Everything is an app that allows students to create, collaborate, communicate and consume content at any age. Overall, Explain Everything is very easy to use for all students and easy to set up. The biggest drawback is that you do have to purchase the app, but it is well worth the money!
